Irish Inspired Butterfly Cupcake

Irish Inspired Butterfly Cupcake

I was so excited this week to have a comment from Ann and Anna in Co. Meath Ireland and I wanted to post a cupcake picture to say thank you to them for their interest in my blog.  Also to all our family there miss you like mad and here is a cupcake just for you.  Hope you are having a great summer and can’t wait for ours.

4th July Cupcakes

4th July Cupcakes

My scrapping friend, Shaunagh asked me to do 4th July cupcakes for her and as usual I started off with research for something different to decorate the cupcakes with.  I was delighted to have Stephanie’s blog Life Tastes Like Food pop up on WordPress with her most delightful 4th July strawberries.  I was so intrigued by her inventiveness and creativity and thought they would look perfect on the cupcakes.

They were really easy to do and delightful as a finished decoration.  Note to self though it is difficult to find strawberries in Woolies while Wimbledon is on!

Tour de Cupcake

Bicycle Themed Cupcakes

Tour de Cupcake

These Bicycle themed cupcakes were the most challenging so far as I couldn’t find an easy way to make a fondant wheel. While looking I found some other gorgeous shape cutters so watch out for those soon.

I ended up making a bicycle wheel out of chocolate, not an easy task but they looked quite cute.  The rest of the cupcakes were decorated with 40’s for the 40th birthday and I added the King of the Mountain polka dot shirt to a few of  the cupcakes in honour of the Tour de France.  The cupcakes were red velvet and really yummy as I found the perfect recipe 3rd time round thanks to my friend Catherine.

Red Velvet if You Please…..

Roll out the Red Carpet for these Cupcakes!

Red Velvet Cupcakes are not the easiest cupcakes to bake as you need to get an even balance between the chocolate and the red colour of the final baked product.  They also need to taste smooth and velvety.  My first attempt were awful as the recipes I researched all called for baking soda in them.  All I could taste was the bitter soda taste and they were dreadful.

My second attempt was way better and I swopped baking powder for baking soda and they came out chocolatey, velvety red.  Iced them with vanilla cream cheese icing and they look and taste delicious.

Play Your Cards Right!

Monte Carlo Cupcakes

Feeling Lucky!

I was asked to make Monte Carlo themed cupcakes recently for a display.  Quite a challenge but I ended up having so much fun making Monte Carlo inspired playing cards, dice and casino chips.  The colour scheme was black, red and white and the cupcakes were a hit.

HINT: I made playing cards in different sizes and then used little icing hearts to complete the cards.  They are easy to stick on with Tylose which is an edible glue.
