I couldn’t wait to try out Martha Stewart’s Apple Cupcakes so used the opportunity to experiment on Sunday as the church needed some cakes for their cake sale.  These cupcakes didn’t turn out as round as my others but that was more my fault for not taking time to read the recipe properly but they tasted delicious full of apple, cinammon and nutmeg so I will be making these again.

I topped them off with a cream cheese icing and an apple I made out of red fondant to which I added a clove for the stalk (thanks Lisa – the quiet one fot the idea) and they not only smelt and tasted delicious but they looked really cute.  I copied Martha Stewart’s brilliant way of displaying her apple cupcakes as I thought it was really clever.

Yesterday was Lisa’s birthday and it was a privilege to make a cake especially inspired by her.  Lisa is the owner of the most brilliant scrabbooking shop – The Memory Shed in RandPark Ridge.  Wednesday mornings are my favourite morning of the week as we scrap with a fun group of ladies and we have Lisa to inspire us and generally  keep us from going off the scrapping rails!

This cake depicts a double layout of Lisa’s shop set in its gentle and peaceful surrounds.  What you can’t see are all the cats that Lisa has rescued, fed and loved over the years, all the chickens, roosters and guineal fowl that visit her on a daily basis for a chat and all the scrappers she has inspired in this wonderful environment over the years she has had her shop.

Thanks Lisa for being such a kind, loving, giving and inspirational beauty to us all (4-legged friends included here).

Yesterday, 5th July, Eddie and I celebrated our 21st Wedding Anniversary.  Not sure what the theme of a 21st anniversary is but here are the delectable cupcakes I made to celebrate the day.  Thanks to Eddie my all time favourite cupcake eater. May I have many more years to tempt you with my new cupcake ideas!

My scrapping friend, Shaunagh asked me to do 4th July cupcakes for her and as usual I started off with research for something different to decorate the cupcakes with.  I was delighted to have Stephanie’s blog Life Tastes Like Food pop up on WordPress with her most delightful 4th July strawberries.  I was so intrigued by her inventiveness and creativity and thought they would look perfect on the cupcakes.

They were really easy to do and delightful as a finished decoration.  Note to self though it is difficult to find strawberries in Woolies while Wimbledon is on!

These Bicycle themed cupcakes were the most challenging so far as I couldn’t find an easy way to make a fondant wheel. While looking I found some other gorgeous shape cutters so watch out for those soon.

I ended up making a bicycle wheel out of chocolate, not an easy task but they looked quite cute.  The rest of the cupcakes were decorated with 40’s for the 40th birthday and I added the King of the Mountain polka dot shirt to a few of  the cupcakes in honour of the Tour de France.  The cupcakes were red velvet and really yummy as I found the perfect recipe 3rd time round thanks to my friend Catherine.
