Today the friends of Dom wanted to say a huge thank you from the bottom of our hearts to the doctors, sisters and the staff of St Luke’s ICU who have taken Dom into their hearts as they treat him for meningitis. On Friday as Dom was admitted to ICU, his family, friends and the staff have been his most ardent supporters in his fight against the meningitis virus that he contracted. His mom and dad have mentioned daily the amazing care and concern that the staff have shown their son and we thought that it would be special to thank these staff in a small way with a lovely hamper of goodies, individual cupcakes and a card. I met 2 of these staff today who were delighted as the goodies were brought to them and Dom will be pleased to know when we get to tell him that an elderly gentleman visibly perked up and invited us to share the gifts with him too. Small smiles today as we tried to help in the way we could and show how much Dom and his family mean to us all. Today and every day as you get stronger Dom we want you and your family to know you are in our thoughts and prayers and we say thank you to all the wonderful medical staff around you who give selflessly of themselves as they treat you.
Pretty in Pink 21st Cupcakes
Shayna continued her 21st Birthday celebrations on Sunday with more friends and family and of course more tasty cupcakes. She asked me to do white chocolate cupcakes with a strawberry filling and then ice them and decorate with pretty cascading blossoms. I used a really quick and delicious strawberry jam recipe from Sam Linsell’s book, Drizzle and Dip, and mixed the jam with mascarpone cheese before adding it as a filling to the white chocolate cupcakes. I iced half the cupcakes with a chocolate icing and the rest with a strawberry icing and then added the pretty blossoms with their tiny beaded centres to the cupcakes. It was brilliant to celebrate Shayna’s 21st with her, her family and guests as we have all watched her grow up into the beautiful young woman she is today. Thanks again Shayna for your exciting cupcake orders and hope that your 21st birthday will be a memory you will treasure for ever.
Shayna’s 21st Cupcakes!
Michelle’s beautiful daughter, Shayna, celebrated her 21st birthday with her family and these gorgeous cupcakes that she asked me to make for her. As Shayna spends almost all her waking hours in an industry that is creative and innovative I was not surprised when she asked me to do something different with the cupcakes for her special celebration. In keeping with the soft pink and lime green colour theme, Shayna ordered lime cupcakes with a lime curd filling. My reliable google searches took me to Martha Stewart’s website and I used her Key Lime Curd recipe and the result was a curd with a hint of buttery sugary sweetness along with a zingy taste of lime. All the cupcakes were filled and iced and then decorated with a pretty pink and lime green daisy, flower or butterfly. Michelle’s idea was to use the cupcakes in boxes as name place settings and she handmade and wrote beautiful tags to place on the boxes. Thanks to Shayna’s zesty requests and Michelle’s attention to detail the cupcakes in their boxes were perfect for Shayna’s 21st birthday lunch. I love your creative way of thinking Shayna and the way you express your passion for your work so eloquently. Wishing you a wonderful 21st birthday, you looked gorgeous, your cupcakes looked pretty and today was just perfect in every way for your celebration.
Cappuccino Cupcakes
Thank you Alison for your 2nd order of birthday cupcakes to celebrate with your scrapbooking friends. I take it as a compliment that you enjoyed the cappuccino cupcakes so much last year that you chose the flavour for these cupcakes again. Definitely the best experience about making cappuccino cupcakes, after tasting them of course, is when you open the box and the coffee aroma wafts up to entice your senses! Nestled into the delightful coffee icing, I added a sugar paste flower and bird for Alison as she loves birds. I am sure you enjoyed your creamy cappuccino cupcakes and had fun celebrating while taking part in one of your favourite hobbies.
Cupcakes for Jo’s Sweet Sixteen Birthday!
With Jo celebrating her Sweet Sixteenth Birthday this year her mom,Liz, asked me to do cupcakes for the celebration and she chose a Strawberries and Cream theme for the cupcakes and decor. She surprised Jo with pizza, balloons, presents, cupcakes and messages from all her friends during her school lunch break. I baked Strawberry and White Chocolate Cupcakes in these delicate pink and white flower cupcake cases and then made a creamy vanilla icing to top them. I cut flowers in a variety of shapes in deep pink, pale pink and white and then combined them giving them either a contrasting rolled rose or beaded centre. Immediately after icing the cupcakes I gave each one a sprinkling of pink or white beads before adding a flower. Thanks Liz for your order of these cupcakes for your delightful daughter and I am pleased that Jo enjoyed her surprise and her cupcakes.
Going Dilly with a drizzle of Passionfruit!
Two posts in a row with Passionfruit and White Chocolate Cupcakes, so yes I have gone dilly for passionfruit. Tracy, also one of my top commenters last year, celebrated her birthday in December. As she was away over that time she received a very belated present and cupcakes from me this week. Drizzled with passionfruit, I couldn’t resist photographing them with these white chocolate chips and a spoonful of the passionfruit. I added a sprinkling of yellow edible beads to complement the gorgeous summery yellow of the fruit.
